Ube Type Extract, Natural & Artificial

Ube (or ubi) is the Filipino word for purple yam (Dioscorea alata). Our Ube Type Extract, Natural & Artificial has a nutty like flavor with a coconut background note. It can be used in a variety of desserts. In ice cream we recommend a starting use level of 0.60%, or 0.86 ounces per gallon (144 ozs.) of premium ice cream base. This extract is clear and near colorless and does not contain added purple food color. It can be used, however, in conjunction with natural or synthetic water based colors if a deep purple color is desired.
